My name is Aimee, and I am gluten free. I am also healthy, and happy, and thriving. I live an amazing life in Florida where I get the opportunity to go to the beach all year round and visit Mickey Mouse whenever I want to. I also get to eat as much gluten free food as I want…naturally.
My life as a gluten free thriver began almost 10 years ago when I was diagnosed with Colitis, an inflammation of the colon caused by stress, anxiety, and food. I never would have thought that food could wreak such havoc on my body. After a visit to the doctor after my third colonoscopy at 34 years old, I was told that medication would get my colitis at bay, I decided that my life would not be dictated by my condition, but I would dictate the condition to adjust to the way I wanted my life lived. And that’s where my decision to be gluten free happened…right in my backyard in NJ watching my young children play while I cried in relief.
Living gluten free is not a punishment. It is an opportunity to eat real. To eat naturally. It gives you the chance to eat healthy and treat yourself every now and then. You will learn how to cook differently with new, and interesting recipes. You will eat with intention. And most importantly, you will live with conviction that you are doing the right thing for you.
Being gluten free is a way of eating…it does not define you. I will admit that transitioning to a gluten free lifestyle is a challenge, and one that will take a while to get used to. However, in the long run, your body will thank you. Not only will you lose some weight (not a reason to go gluten free, by the way), your energy will return. Your skin will clear. Your headaches will disappear. And your stomach issues will vanish. You will become the you that you have always dreamed of being.
